Stir Fry Ramen for Two

Stir fry ramen is a quick and simple recipe I have been making for years. Most of the ingredients are interchangeable and can be found at your local grocery store – you can even use your leftovers! This one-skillet recipe is ideal for two but it can easily be altered for more. You can make this at home or even in your future dorm!
- 1 Package of Ramen Noodles (any flavor)
- 4 TBS of cooking oil
- 3 eggs
- 1-2 cups diced veggies (frozen or fresh)
- Cooked protein of your choice: meat, tofu, seafood, etc. (I usually use dinner leftovers)
- Pinch of salt & pepper
- ½ – 1 sheet of nori (seaweed)
- Soy sauce (to taste)
First, cook your ramen following the recipe on the package, but DO NOT use your flavor package. After your noodles are finished drain water and set aside.
Next we will cook the eggs, place about 2 TBS of cooking oil in a skillet and heat on med-high. Crack the eggs in the skillet and scramble. Once the eggs are scrambled, set them aside with the noodles.
Add the remaining cooking oil to the skillet, heat low-med. Place all your veggies and cooked protein in the skillet and heat, stir occasionally. Once everything is warmed up you can add the flavor package as well as the salt and pepper. Feel free to add any other spices you would like.
Now to the fun part, increase your stove to high. Now add your eggs and noodles to the skillet. Sauté all your food together until it is golden brown and sizzling like crazy. (Optional) break up ½ a sheet of nori and stir in skillet. Remove from heat and serve immediately. Enjoy!
