Senior Emma Higgs is a prime example of service. Many people don’t know that Ms. Higgs has her very own baking business. Her interest first started when she would help her grandma with Thanksgiving cooking and baking. Her business launched during COVID, when she started experimenting with different recipes. The deeper “why” behind her business was giving back. She helped families during COVID by baking cookies and hand-writing inspirational notes with each batch. When she noticed people’s interest, she started selling cupcakes and cakes to friends and family. What is Ms. Higgs’ secret to operating a business while also being a busy senior with school and other activities? That balance that works for her includes waking up around 5am to bake before coming to school. On the weekends, she wakes up early to get her baking done so that afternoons leave time for schoolwork, family, and friends. To Ms. Higgs, baking is a way of expressing her creativity, finding calm in her day, and allows her to contribute to her community by spreading happiness through baked treats. After Assumption, Ms. Higgs plans on majoring in political science and international law at the University of Kentucky. However, even with a busy college life, she still plans on continuing to bake.
